You can knead a simple dough for bagels using kefir. Bagels always turn out rosy and appetizing, and their taste can be varied by experimenting with the filling.

The classic recipe is easy to master even for the least experienced housewife. Working with any test has its secrets. To make it sufficiently plastic, all ingredients must be the same, at room temperature. This means taking them out of the refrigerator ahead of time so they don't get too cold.

Ingredients:

  • 3 chicken eggs;
  • 110 g granulated sugar;
  • 460 g wheat flour;
  • 220 ml kefir with a fat content of 3.2%;
  • 150 g margarine;
  • 10 g baking powder;
  • 3 g salt;
  • 100 g jam.

Step-by-step recipe for kefir bagels

Break 2 eggs into a bowl, separate the whites from the yolks. Whisk the egg whites and sugar until white foam forms. Sugar should completely dissolve in the total mass.

Melt margarine in a water bath until liquid consistency. Mix with two yolks, add ½ tsp. salt. Combine with whipped egg whites, add baking powder. You can use baking soda instead of baking powder. Pour in kefir, mix everything well.

First sift the flour through a sieve and pour it into the liquid mass in small portions. Knead the dough, it should be stiff, but not stick to your hands. In order for the dough to be enriched with oxygen, it must be kneaded well for at least 5-7 minutes. Then form a ball and let it stand for 10-15 minutes.

Using a rolling pin, form a layer of dough 3-5 mm wide. Cut it into uniform triangles - these will then be used to make bagels. Grease the lower, wide part of each triangle with jam and roll into a roll. The dough can be lightly pinched to prevent it from unfolding.

Set the oven to preheat in advance. Cover the bottom of the baking sheet with baking paper, place the bagels at a short distance from each other so that the dough does not stick together. Break the remaining chicken egg, separate the white from the yolk, only use the yolk. Lightly beat it with a fork and use a pastry brush to coat the top of each bagel. Then when baking they will turn out shiny and look more appetizing. Bake for 15 minutes at 210-220C.

  • 0.6 kg of confectionery flour;
  • 200 g granulated sugar for dough;

  • 30 ml vegetable oil;
  • 300 ml kefir;
  • 1 packet of baking powder.

How to quickly make bagels with kefir

Heat the kefir slightly, to a maximum temperature of 37C, add sugar. Beat with a mixer at high speed, it is important to ensure that the sugar is completely dissolved. Pour in vegetable oil. Without ceasing to constantly beat the mass, add flour and baking powder. When it becomes cool, continue kneading with your hands.

Roll out the dough and cut it into triangles. Light the oven and line a baking sheet with parchment paper. Grind the sugar in a coffee grinder, pour the resulting powder into a separate bowl.

Roll each triangle tightly into a roll and give the product a crescent shape. Place the bagels on a baking sheet and place in the oven for 15-20 minutes.

The required temperature is 200C. Sprinkle the finished bagels with powdered sugar.

Pour in kefir, mix everything well. Add flour and prepare a stiff dough. It should stretch well, be soft and flexible, but not stick to your hands. If necessary, you can use additional flour. Cover the finished dough with a towel and let stand for a quarter of an hour.

Roll out the dough to a thickness of 3-4 mm, cut into triangular pieces. All triangles must be the same size. For each you need to put 1-2 tsp. boiled condensed milk and roll the bagels, pinch the narrow edge of the triangle so that the bagel does not unfold.

Grease a baking sheet with butter and place the bagels. Place in the preheated oven for 20 minutes and serve hot.

Step by step recipe

Heat the milk and dissolve the yeast in it. Place the container in a warm place for 20-25 minutes. During this time, tremors will begin to act and foam will form on the surface. Break the egg, beat lightly with a fork, and combine with milk. Add kefir and melted butter. Mix everything well, add a pinch of salt, a pinch of vanilla sugar and 1 packet of baking powder.

Add flour to the liquid mass and knead the dough. Knead it for 10 minutes, put it in a separate bowl, cover with a towel. Place the container with the dough in a warm place so that it can rise, and let it stand for about an hour and a half. During this time, the total volume will increase significantly.

Knead the risen dough again, roll it out, and divide it into triangles. Place a small amount of jam at the base of each triangle and roll into a bagel. Place the bagels on a baking sheet lined with baking paper. Bake at 190C for about 25 minutes.

Sprinkle the finished bagels with powdered sugar and serve. They will have a light vanilla aroma.
