This is why summer cocktails have earned such a significant share of attention and are popular as the weather warms up. Moreover, we are not talking about alcohol here; note, the effect is exclusively refreshing and tonic.

All cocktails that are popular in the summer can be divided into three categories by time of day when they are best suited for consumption.

In the morning, nutritious fortified cocktails based on fresh fruits and berries are more suitable for you.
At lunchtime, refreshing cocktails using ice will come in handy.
In the late afternoon, it would be a good idea to recharge your energy with caffeinated tonic drinks. Why do this? But who sleeps in the summer, pray tell? A night full of adventure and active recreation is ahead!

If we look at the recipes for summer non-alcoholic cocktails in more detail, we can come to the conclusion that at present there are already a lot of them. But we will focus on the most popular ones, which allow people all over the world to feel coolness and pleasure during hot summer life.

Nutritious fortified cocktails

1. Double layer smoothie with berries. This cocktail attracts attention not only with its bright colors, but also with its contents. As ingredients for the bottom layer, you need to use a ripe mango, about a spoon of lime juice, fresh orange juice and a couple of spoons of honey.

Mix all the ingredients using a blender and pour into a glass, filling it exactly halfway. Then we begin preparing the top layer. You need to take a banana and a tablespoon of squeezed lime juice, which we will mix with one hundred and fifty grams of strawberries or cherries.

Having mixed all this thoroughly, fill the glass until it is full. You can leave a few slices of mango, strawberry and banana on top as garnish.

2. Yogurt smoothie with berries. This cocktail is easier to prepare. To prepare, you need to pour a glass of milk into a blender, half the amount of low-fat yogurt and a few berries or cherries. Pour this entire “mix” into a glass, and cover the top with a layer of sliced ​​strawberries or cherries, depending on the flavor you initially chose for your cocktail.

3. Fruit smoothie with yogurt. To prepare this potion we will need a banana, seedless white grapes, a green apple, kiwi and honey. In addition, you need to get unsweetened yogurt somewhere, and add sugar separately according to your own taste. All ingredients must be thoroughly mixed in their purified form and served with kiwi slices as a decoration.

4. Watermelon mix. It’s not for nothing that watermelon is a summer berry, so it has found its own niche in the production of cocktails. In a ratio of three to one, you need to mix watermelon and raspberries in a blender and then decorate the top of this mass with a mint leaf. This cocktail not only perfectly energizes you in the morning, but also helps build muscle mass in athletes.

5. Blueberry smoothie. As the name suggests, the main ingredient of this cocktail will be blueberries. But besides this, there is also a frozen banana, orange juice, a spoonful of honey and vanilla sugar.

Banana and blueberries need to be mixed in a blender, gradually adding orange juice, watching the consistency. After everything, add honey and vanilla sugar on top, but if you find the drink sweet even without them, you can make do with what you have.

6. Tropical smoothie. This cocktail combines all the delicious tropical fruits along with a homegrown twist in the form of strawberries and apple juice. Refreshing cocktails using ice

1. Non-alcoholic Pina Colada. This cocktail is known to many. But few people know that it can also be non-alcoholic if prepared properly. The recipe for this drink is quite conservative and understandable.

You just need to take low-fat milk, heavy cream and pineapple. Mix the first two ingredients using a mixer until the resulting mass is homogeneous, which should then be poured into a glass. All this needs to be sweetened with a tablespoon of sugar, then decorate the top of the glass with pineapple slices.

2. . This drink perfectly quenches thirst and serves as a refresher on the hottest summer day. There is nothing complicated in its preparation.

You just need to cut the lime into several parts and then squeeze the juice into a glass. A couple of used cloves are placed at the bottom of the glass, and then the whole thing is “polished” with crushed mint.

The next step is ice cubes, after which you immediately need to pour soda along the sides of the glass. On top you can decorate all this splendor with another mint leaf.

3. Lemon-apple fresh juice with ginger. When preparing this cocktail, we will need lemon and a few apples, which we will then dilute with ginger. You just need to peel these fruits and squeeze the juice out of them, grate them and add the pulp to the resulting fresh juice.

After this, you need to wait until all the ingredients are mixed and strain. The resulting liquid can be further diluted with a pinch of cayenne pepper to add a touch of piquancy.

4. Green vitamin mix. This cocktail is not only perfectly refreshing, but also fills our body with the necessary amount of vitamins. An apple, cucumber, half a lime, a couple of sprigs of dill and celery, as well as a little sorrel must be crushed and passed through a juicer.

Believe me, you will definitely like the resulting mixture both in terms of taste and vitamin content.

5. Summer freshness. The very name of this cocktail speaks for itself. To prepare you will need green tea and some fruits. Among these, you need to highlight a couple of kiwis, lemon juice, diluting it all with cane sugar. Best served with ice.

6. Ice coffee. To prepare this drink you will need strong coffee and natural milk. These ingredients should be added in a one to one proportion to a blender, and also add a few ice cubes. After mixing the contents, you need to pour it into a glass, and place another scoop of vanilla ice cream on top. It is advisable to drink this drink through a straw.

7. Vitamin mix of avocado and cucumber. This cocktail will not only help you refresh yourself during the summer heat, but also fill your body with vitamins. First of all, you need to peel the cucumber and avocado, then cut into small slices.

You should also first remove the pit from the avocado, then place all this abundance in a blender, combining it with sprigs of basil and oregano. You also need to add pistachios and salt to taste to the blender. By mixing all this, you can get a high-quality, fortified and refreshing cocktail.

8. Sweetie. To make this sweet and fresh cocktail you will need a shaker. Use it to thoroughly mix the juices of pineapple and orange. Also add pomegranate syrup with ice cubes. After pouring the contents of the shaker into the glass, you can decorate your cocktail with a cherry on top, which will add a touch of sophistication to it.

9. banana light. This cocktail combines banana, pineapple, lemon and orange juice. All this, along with several slices of a whole banana, is mixed in a shaker with the addition of ice, and then poured into a glass. You can place a mint leaf on top as a decoration.

10.Pomegranate frappe. For this cocktail you will need one scoop of lemon sherbet, which must be placed in the glass initially. And fill it with a mixture of pomegranate and lime juice, which are shaken together with ice. Top with a quarter of a lime and a sprig of lemon balm.

11. Pineapple sour. This cocktail couldn't be easier to prepare. You just need to mix pineapple juice, sugar syrup and lemon juice.

12.Summer. To prepare a cocktail with the meaningful name “Summer”, you will need juices. In particular, pineapple, orange and tangerine. Pomegranate syrup is also used. Mix the juices with ice, and add the pomegranate syrup into the glass after. Place pieces of fruit nearby as decoration.

13. Crimson. For this cocktail you will need a quarter kilogram of raspberries, a glass of cream, a couple of tablespoons of granulated sugar and ice. Everything except the ice is mixed in a shaker and served in tall glasses.

14. Northern. If you take a kilogram of carrots, half a liter of cranberry juice and the same amount of boiled water, you can prepare about six servings of a high-quality refreshing drink. The first two ingredients must be mixed in the juice state, but add water and sugar to taste after that.

15. Aqua fresco. This cocktail requires melon, lemon, sugar and mint to make. In addition, you will need sparkling water and ice. First of all, you need to bring the melon pulp to a homogeneous mass using a blender. Pour plenty of lemon juice over the top, add sugar to taste and crushed mint leaves.

Make the resulting mass homogeneous and let it brew for three hours. After this, you need to use a coarse sieve to strain this combination of fruits and aromas, and also dilute the liquid with sparkling water. Serve with ice cubes in a glass.

Summer tonic cocktails

1. Lemon Twist. This cocktail, invented in the French city of Strasbourg, wonderfully combines vegetables and fruits. In addition to fresh celery, beet pulp and a lemon wedge for garnish, there is also room for lemon juice, apple juice, and non-alcoholic beer Tourtel brand.

2. Aojiru. This drink is green in color, which is logical based on the fact that its main ingredient is cabbage juice. It is not very tasty, as they say, “for everyone,” but it is very, very healthy.

3. Punch "Plantator". This invention is also quite dietary, so it is very popular among women all over the world. Most of the juice here is carrot, but there is also pineapple and tangerine juice. In addition, the punch contains strawberries, which must first be marinated in pepper. And all this is diluted with special Evian water.

4. Lassi. If you are in an atmosphere of high temperature and significant humidity, without being able to acclimatize for a long time, then lassi will help you with this. It consists of water and yogurt.

Further preparation depends on whether you are a fan of sweet drinks or prefer a more spicy taste. You can add honey and sugar or use salt.

5.Ovaltine. The drink with such a pleasant name combines malt and egg. They replace coffee drinks with a “3 in 1” effect. That is, in the evening this is the best thing if you suffer from insomnia. Currently, to prepare Ovaltine, you just need to get the powder prepared by the manufacturers and add milk to it. Moreover, the temperature of the milk does not matter.

6. Mate. This product is much more tonic than the coffee we are used to drinking daily. But its disadvantage is that the holly tree, from the leaves and stems of which mate is made, grows only in Latin America.

I have a few introductory axioms that I use to make a cocktail. These are super ingredients: high-quality alcoholic drinks (I use premium alcohol) and fresh foods (leaves, vegetables, fruits, spices). It is also the hands and personal attitude towards drinks. There is also a certain filter in the mouth that understands what is possible and what is not. Maybe my experience as a cook helps me, or maybe my experience as a technologist, but I always weed out everything unnecessary and people end up getting what they want. And the last, most important criterion for a successful cocktail is demand and relevance. I don't do what people don't drink.

This season there is a demand for the Spritz cocktail: I make it not with prosecco, but with cider - it has become even more refreshing and popular. People love clear glasses and ice. It is associated with rest, siesta, vacation. Naturally, when you come back from work in the evening, you want to return these feelings, at least through a drink. Homemade Colada is essentially a classic Pina Colada. We serve the cocktail in a milk bottle, mocking the existing incorrect version of Pina Colada. Sometimes bartenders add milk or cream to a cocktail, which is a violation of the recipe and is in bad taste. Initially, when the drink was invented, its composition included fresh pineapple juice, coconut cream and rum. The balance of these three components is the ideal cocktail recipe. When creating the “Banks” bar card, I tried to incorporate all the most current and popular trends in a modern bar. We have already presented interesting varieties craft beer and cider, there is a decent wine line, and now we have introduced cocktails. All cocktails in the Bank are made exclusively from ingredients that we prepared ourselves. For example, “Tomato Scrub” is a light summer cocktail with notes of tomato and basil. First, tomato water is prepared: the tomatoes are chopped, basil is added - everything is covered with sugar and infused for three days. The fermentation process begins and tomato water is released. After this, it is mixed with wine vinegar. The resulting mixture is brought to a boil, cooled and filtered - this is how the base of this cocktail is obtained, which is then mixed with vermouth, sparkling wine and gin.

I would also recommend a White Negroni for the summer season. In our country, it is prepared from Lille Blanc liqueur, gin and French Suze, which gives it a light green color. The cocktail is served with orange chips. I also recommend liqueurs that are popular at any time of the year - chamomile whiskey, thyme and prune whiskey, and raspberry gin.

The Final Fantasy cocktail was conceived as an alternative to the classic and beloved Spritz cocktail. This is a light summer cocktail, an excellent aperitif, which is also suitable to accompany cold appetizers and seafood salads. It consists of red plum wine, a splash of soda and the French aperitif Suze. The cocktail is refreshing, slightly tart, with a subtle bitterness. For decoration we use freeze-dried lingonberries - they also add additional acidity to the drink. As you drink the lingonberries, they gradually turn the cocktail red - this gave us the idea for the name Final Fantasy. This name was also inspired by the Japanese anime of the same name.

The idea for creating this cocktail came to us while thinking about how to convert people who love beer to drink cocktails. So the idea was born to use syrup made from beer, and away we go... An unexpected combination scotch whiskey and traditional Irish stout gives rise to a cocktail with a harmonious taste and airy texture. Strong, yet light, Hoppy Sour is perfect for the warmer months. In addition to scotch and Guinness, the cocktail contains homemade hop syrup, lemon juice and protein, which gives it its characteristic consistency.

For the Adonis 22 cocktail, I infuse Martini Rosso with pu-erh tea, due to which the vermouth acquires astringency, its sweetness is smoothed out, and new flavor notes appear. The tea here is not pronounced, but gives a noticeable accent, just as it seems to me that the sherry and orange bitters included in the drink create a harmonious alliance. The cocktail goes well with Chinese dishes served in our restaurant.

Mint Julep is fresh spicy drink, which can be drunk in large quantities, so my choice fell on it. Usually at NOOR we prepare only classics with minimal adjustments. However, we made this cocktail our own, adding mint sugar to it.

A little about the history of the drink. Since the 18th century it has been served in a silver or metal glass. Frost forms on the walls of such a glass, giving coolness. That is why the drink is so popular in the sultry southern states of the United States. The Mint Julep is still traditionally served during the biggest horse race, the Kentucky Derby.

The cocktail contains powdered sugar, bourbon and mint. We mix the ingredients and, adding plenty of crushed ice, serve it in a copper glass.

I came up with the Hongsavan cocktail during a trip to Asia. Upon arrival in Moscow, it was modified and acquired its final form. Fresh, light, but at the same time rich and piquant, it is suitable for both girls and men.

The taste was interesting, fruity and fresh. The aftertaste includes notes of ginger. Hongsavan is served on a board with cheese biscuits and homemade strawberry and red hot pepper marmalade.

We worked on the creation of the Duran Duran cocktail for two months: we studied the tastes of the lead singers of the Duran Duran group, looked for combinations and verified the nuances of taste. I came up with a new cocktail in 2008, when I was working in one of the iconic Moscow bars. Already having sufficient experience and knowledge, I began trying to combine seemingly incompatible products, experimenting and inventing original mixes. It contains: red bell pepper, strawberries, Campari bitters, dry gin, chestnut honey and lime juice. The cocktail has pleasant taste, which combines the sweetness of strawberries and honey, freshness bell pepper, as well as slight astringency and bitterness characteristic of Campari.

The drink is served in a frozen cocktail glass and garnished with a slice of bell pepper and green pea shoots.

I am a very big fan of the Negroni cocktail (it was the basis for my cocktail) and am not a fan of complex premixes with rare ingredients. I was inspired to create the cocktail itself by two factors:

  1. approaching summer;
  1. the thought of something to enjoy in the summer, something alcoholic to keep it fresh and strong.

I used gin as a base because I really love this drink. I added Suze aperitif, which I respect for its history and taste. By the way, now, in my opinion, it is not as popular among bar guests as it used to be, although it perfectly tones and quenches thirst - it is not for nothing that it was once called “a healthy aperitif for athletes” and “a friend of the stomach.” I wanted to complete this picture with something sweet, so the third ingredient was Martini Bianco vermouth. The result, in my opinion, is a very balanced aperitif cocktail that will easily save you from the summer heat!
