How long to cook pork kidneys for a cat. How to cook pork kidneys and how long does it take? Additional recipes with video

Even those housewives who know how and how much to cook beef kidneys do not always get the desired result. This is because many of them ignore the rules for preprocessing the component. Despite the fact that this procedure takes a total of several hours. As for the timing of boiling beef kidneys, they range from 50 minutes to 1 hour 20 minutes. Only after all stages of processing have been completed can you begin to prepare the main dish based on the boiled offal.

How to properly prepare beef kidneys for boiling?

The process of pre-processing beef kidneys is not complicated, but it takes a lot of time. It allows you to bring the product to an optimal state, even if it is not of the highest quality (for example, it was obtained from not the youngest cow). There are several stages of preparation:

  1. First, you need to cut off everything unnecessary from the buds. These are films, channels, fat and veins, which during heat treatment only become harder and are not chewable, which spoils the product. Even if these elements account for a significant part of the live weight, you should not try to save, everything must be removed to the maximum.
  2. We wash clean kidneys in cold water, changing the liquid several times.
  3. Be sure to soak the offal in water, or even better, in milk, for 2-3 hours. If possible, change the selected fluid at least a couple of times.

Now all that remains is to remove the product, rinse it under running water and cut into small pieces. Despite the fact that the kidneys can be boiled in their entirety, it is better to grind the component. This will allow you to spend a minimum of time on bringing it to readiness and remove internal vessels and films.

The process of cooking beef kidneys in a saucepan

Place the prepared offal in a cooking container and fill it with water, which should exceed its level by 2-3 cm. Place the dish on medium heat and bring the mixture to a boil. After this, reduce the heat to low and let the mixture simmer for 5-6 minutes. Then drain the water and rinse the workpiece under running water.

If a greasy coating appears on the walls of the pan, it needs to be washed off. Again, place the product in cold water and repeat the entire procedure. In total, this process must be repeated so many times that the total duration of boiling the kidneys is from 50 minutes to 1 hour 20 minutes, depending on the quality of the component and the size of the pieces.

Advice: When you have to deal with very fresh offal obtained from a young animal, you don’t have to worry too much. In this case, it is enough to boil the component twice for half an hour, changing the water only once and washing the pan.

Taking into account the specifics of preparing the product, a multicooker, double boiler and pressure cooker are used extremely rarely for processing it. In extreme cases, you can use the microwave. True, you will have to independently determine the duration, frequency and power of the exposure.

Recipes for delicious dishes based on boiled offal

A wide variety of dishes can be prepared from boiled beef kidneys. If you don’t want to limit yourself to mixing them with stewed vegetables, you should try the following recipes:

  • Mushroom salad with kidneys. In addition to 150 g of boiled kidneys, we will need 300 g of boiled chicken fillet, a couple of tablespoons of chopped dill, 3 tablespoons of small pickled champignons, 5 cherry tomatoes, a small head of onion, salt, pepper and a tablespoon of vegetable oil. All components just need to be chopped to the desired size, mixed, seasoned with spices and vegetable oil.

  • Rassolnik with boiled kidneys. Take 300 g of boiled kidneys, three large potatoes, 3 salted (not pickled!) cucumbers, an onion, a carrot, 3 tablespoons butter, half a glass of pearl barley, a little parsley, basil and salt. Soak the pearl barley for an hour, finely chop the kidneys. Peel the carrots and onions, chop them and fry them in butter. Add chopped cucumbers to them and simmer for a quarter of an hour. Place pearl barley, diced potatoes and kidneys into the meat broth. After 10 minutes of boiling, add all other ingredients and cook until fully cooked. Serve with chopped herbs and sour cream.

  • Salad with kidneys and green peas. We will need 300 g of boiled kidneys, half a glass of green peas, half an onion, a bunch of lettuce, a teaspoon of wine vinegar, dill, 3 tablespoons of sour cream and salt. Cut the kidneys into small cubes and sprinkle with vinegar. We tear the washed and dried lettuce with our hands and finely chop the onion. Combine all the ingredients, thoroughly but gently knead the mass, season with salt and sour cream.

In addition, soaked and properly boiled buds make an excellent filling for pies and pies; they can be used to make pates and snack cakes. The already boiled component is often added to a variety of soups, stews and porridges in order to give them taste and nutrition. It should be remembered that boiled beef kidneys must be used immediately after cooking. Even if they sit in the refrigerator for only a few hours, their texture will noticeably deteriorate, and the taste will no longer be the same. But ready-made dishes with this component can last in the refrigerator for up to 2 days.

Cook the kidneys for 40 minutes-1.5 hours

How long should kidneys be cooked?

A kidney dish is a delicacy that not many people can prepare correctly. It turns out that this offal makes very tasty dishes. What is needed for this? Initially, the kidneys will need to be properly prepared. How long to cook the kidneys and how to prepare them depends on their type.

Before cooking, fat should be thoroughly removed from the surface of the kidneys and soaked for 6 hours. The water is changed several times (every 2 hours): as soon as it acquires a reddish tint, it should be replaced. To speed up the soaking process, it is recommended to cut the kidneys into small cubes.

If you are cooking beef kidneys, you must first rinse them and place them in a pan of cold water. Place the container on fire. When the liquid boils, it is drained. Then warm water is taken from the kettle and the cooking process continues over medium heat until done. The procedure for preparing pork and lamb kidneys is somewhat different. The offal is placed in hot water and brought to a boil. The kidneys should cook a little, and then the liquid is drained. The container is filled with hot water, and the offal is cooked further.

The procedure for replacing the water must be repeated at least three times, or rather until the liquid in which the kidneys are cooked stops emitting an unpleasant odor and turning yellow. Once you have achieved this result, cook the kidneys over medium heat for 40 minutes. In general, it will take about 1.5 hours to cook this offal.

You need to salt the kidneys when they are boiled in the last water. 30 minutes before the end of the offal cooking time, add the onion, black peppercorns, and bay leaf to the pan.

Is it better to choose beef or pork kidneys?

Only properly cooked kidneys are ready to be eaten as a snack or as an ingredient in other dishes. If pickle soup, solyanka, kebabs or stew will be prepared from the offal, it is better to use pork. These kidneys go well with various side dishes. Beef offal is best consumed stewed.

Kidneys are a dietary product high in minerals.

The buds have excellent taste. This by-product is also dietary. It has a high protein content. Pork kidneys are rich in B vitamins, potassium, sulfur, phosphorus and many other useful substances, including those that are necessary for the process of hematopoiesis. Beef by-product contains iron, zinc, and selenium. Such components help block the development of cancer cells.

Cooking recipe with step-by-step photos

We wash the offal, removing fatty inclusions if necessary. We cut along.

Place the kidneys in a convenient saucepan or bowl and soak in water for 6-7 hours. Can be left in a cool place overnight. But at the beginning (the first hour) we periodically change the water!
Then, after rinsing it under running water several times, we set it to cook. Let the water boil, stirring (so as not to stick), cook for 20 minutes.
Remove from heat and rinse again. At this step, if desired, you can add milk (50-100 grams) to the water and let it sit for another half an hour - an hour.

We cut the kidneys across, 0.5-1 cm thick.
Three carrots on a grater. Chop the onion, dividing it into 8 parts (the slices should not be large).

Pour oil into the pan until the bottom is covered. First, throw onions on it, after 3-5 minutes chopped kidneys and carrots, lightly fry everything.
After 5-7 minutes, reducing the heat, quickly pour in 1-2 glasses of water. The by-products should be covered almost to the top with water. Salt.

Close the lid and turn up the gas heat. As soon as it boils, reduce to low. Simmer, stirring occasionally until cooked through, about 40 minutes.
Just carry it with you...
Then add spices and butter, let it simmer for another 5-10 minutes. Taste and add salt if necessary. The dish is ready! The preparation is reminiscent of it, only it’s even better for my taste.
I recommend adding another step to the final stage of cooking - after enhancing the taste of the kidneys with spices and oil. Dissolve flour in a glass of water, stir until dissolved. While stirring, pour in flour mixture, into the frying pan to the kidneys.
You can add 3 tablespoons of sour cream and 1-2 tomato paste. I made white gravy without these ingredients. If the dressing becomes thick, simply dilute with water. Bring to a boil over low heat, stirring with a spatula (spoon)

After 7-10 minutes, turn off.

All, original dish ready to serve. Now you know how to properly cook pork kidneys without a characteristic smell and at the same time very tasty.

Dishes made from pork kidneys are not particularly popular in our area, although in other cuisines of the world they are considered almost a delicacy. The reason for this is ignorance of how to cook odorless pork kidneys and avoid a “rubbery” consistency.

According to the recipes of our grandmothers, we soak this offal for a long time (which, in fact, is correct if the pig that gave it was old, or the kidneys themselves are not very fresh) and cook for hours. But it is the prolonged thermal effect that has such a detrimental effect on the delicate structure and makes the dish practically inedible. Therefore, below we will give some tips on how to properly prepare pork kidneys to create a real culinary delight.

We choose carefully

Golden rule: choose only fresh buds. They should be light red-brown in color, smooth, shiny and fairly elastic.

If you see dark spots or, even worse, mucus, and pressure leaves dents for a long time, do not take them under any circumstances. We also recommend avoiding frozen offal.

Removing the smell

1. First of all, wash and dry the kidneys with a paper towel (this will make it easier to work with them). 2. Trim off any excess white fat.

3. Now we get rid of the smell. There are several soaking options for this. Usually, before this, the kidney is cut lengthwise or soaked entirely. You can also slightly cut the surface with a “mesh” so that accumulated aromas are better washed out.

Option 1. Double boiling

Soak the buds in plain water for 2-12 hours. Then rinse, add water and bring to a boil over high heat.

Drain the water, fill it with cold water again and boil again.

Option 2: Rinse in vinegar

Pour 300-400 ml of white vinegar into a bowl and add a heaping tablespoon of salt. Rinse your kidneys until the water becomes cloudy. Place the bowl under running water and let the product “rinse” for about 20 minutes.

This is also interesting: How to eliminate an unpleasant smell in the refrigerator?!

Option 3. Soaking in milk

Fill the kidneys with milk (it perfectly absorbs odors and adds tenderness to the taste) and leave for 1-3 hours. Then rinse thoroughly. Unfortunately, milk cannot be used after this.

You should not skip the soaking step, because pork kidneys, unlike beef kidneys, almost always have a very unpleasant, pungent odor.

How to properly cook pork kidneys

In our diet, we most often use standard dishes, but in some cases we want to cook something tasty from unusual products for us.

When looking for recipes, we turn to either a cooking site or a cookbook. Finding recipes on the Internet these days is not particularly difficult. Resourceful housewives are posting step-by-step preparations of a wide variety of delicacies online. Pork kidney dish is one such delicacy. But not every housewife will always risk preparing such a healthy but specific dish, since there are quite a lot of nuances in its preparation, and if step by step instructions do not follow, then nothing will come out of the kidneys delicious dish.

In addition to excellent taste, kidneys have another advantage - this dietary dish is rich in minerals, vitamins and protein. Pork kidneys are a storehouse of B vitamins, phosphorus, sulfur, potassium and other useful elements. They contain substances that participate in the process of hematopoiesis in the body. Pork kidneys contain a lot of zinc, iron, and selenium, which blocks the development of cancer cells.

When choosing kidneys in a store, you need to pay attention to their freshness, as well as the kidney fat: the kidneys should have a uniform white color and uniform structure, and the presence of fat on them is a good indicator, although it will need to be carefully removed during the cooking process.

Rules for preparing kidneys

Only then will you end up with an excellent kidney dish if you follow all the rules for preparing them. And the main rule: you should never mix offal. If you decide to prepare a dish from kidneys, then you only need to use the kidneys. The following rule in cooking kidneys: the kidneys must be soaked for at least six hours before cooking. And don’t forget to change the water as soon as it turns red. Approximately every two hours. It is better to perform this procedure in a room with an air temperature of +10 to +18 degrees. And one more rather significant point before soaking the kidneys: cut the kidneys into small cubes. To speed up the soaking process, you need to add a little vinegar to cold water.

The process of cooking kidneys depends on their type. Wash the beef kidneys and place them in a saucepan with cold water, wait until the water with the kidneys boils. After this, you need to drain the water, take hot water from the kettle and cook over medium heat until ready. If you decide to cook lamb or pork kidneys, then the procedure for cooking them will be slightly different. You should put these types of buds in a pan with already hot water, bring it to a boil, let the buds cook a little and drain the water. Then fill the kidneys with hot water again and boil.

This procedure must be repeated at least three times until the water stops stinking and gets rid of the yellow color. As soon as you get rid of the yellow tint of the water and the unpleasant odor, cook the kidneys over medium heat for forty minutes. The process of cooking kidneys takes about an hour and a half on average.

Do not forget to also salt the cooked kidneys, but you must remember that this should be done only after you have changed the water for the last time. Thirty minutes before the kidneys are ready, add bay leaf, black peppercorns, and onion to the pan.

Only after all these stages of preparation are the kidneys ready to start preparing a dish from them or using them already cooked for a snack. For kebabs, solyanka, and pickles, it is better to use pork kidneys. Pork kidneys also go perfectly with buckwheat or rice porridge, pasta or puree. You can fry the kidneys, but do not cut them too finely so that the kidneys do not become tough. But it’s better to serve beef kidneys stewed.

The process of preparing pork kidneys itself, of course, plays an important role. But the quality of the original product itself is even more important. If you buy stale, old kidneys, then no matter how you soak them, you will not get rid of the smell of moldy urine in the dish. Therefore, in the market you should choose smooth, bean-shaped offal that is light brown or brown in color, without tearing the outer tissues. They should weigh approximately 100-150 grams each. They are sometimes sold in a fat capsule. You can buy these, but then you pay for the extra weight and will have to fiddle around at home trying to extract the offal from the greasy shirt. The kidneys of gilts (they are usually light brown in color) are more tender compared to adult animals.

Preparation

Let's start with the very basics. Before you start cooking pork kidneys, they must first be deprived of their specific smell. There are several methods for preliminary preparation of offal for subsequent heat treatment. The simplest of them is to soak the kidneys in cold water for 2-3 hours. After this, it is a good idea to let them swim in cold milk for about an hour (it is an excellent absorbent for all sorts of unwanted tastes and odors). Naturally, both the milk and the water should be thrown away after this. Another method to get rid of the smell of urine is to lightly blanch the offal in vegetable oil and water. However, you should not cut them very thin so that the kidneys do not turn out tough. You can also use this proven method: bring to a boil twice, changing the water each time.
