At the beginning of autumn, at the height of pumpkin season, we decided to prepare our favorite manti with pumpkin, adding bacon and cheese. It turned out unconventionally and very tasty.

Pumpkin Cinnamon Pancakes

Bright sunshine pancakes will give a wonderful taste and a great mood on a cloudy autumn day. And even though it’s just food, it will take away the sadness as if by hand. Both you and your baby will love this delicious seasonal dish.

  • 300-350 g pumpkin
  • 2 eggs
  • 200 g wheat flour
  • 100 ml milk
  • 50 g sugar (or to taste)
  • 1.2 tsp cinnamon (or to taste)
  • 1.2 tsp vanilla sugar
  • 1 tsp baking powder for dough
  • pinch of salt
  • refined sunflower oil (for frying)
  1. Peel the pumpkin and cut into cubes. Then puree in a blender.
    Beat the eggs with a whisk. Add pumpkin puree and milk to them. Mix everything well.
  2. Sift the flour separately, add all the dry ingredients (cinnamon, sugar, vanillin, a little salt and baking powder). Stir. Add flour to the puree, mixing thoroughly. The mixture should be quite thick. If desired, you can add other additional ingredients to the dough, for example: raisins, dried cranberries, lemon and orange zest.
  3. Heat a little sunflower oil in a frying pan and start placing pancakes on it using a tablespoon.
  4. Fry your pancakes over low heat, let them brown on both sides.
  5. When serving, drizzle them with honey, maple syrup, or add any jam you like. You can also serve the dish with nuts and sour cream.

Pumpkin chocolate cheesecake

Awesome pumpkin dessert, which melts in your mouth and evokes the most wonderful emotions. And even if it’s raining outside, with such a dessert your day will be sunny and very tasty.

  • 230 g flour
  • 240 g sugar
  • 100 g butter
  • 170 g dark chocolate
  • 3 eggs
  • 70 ml vegetable oil
  • 250 ml pumpkin puree
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch of salt
  1. The oven needs to be preheated to 180 C. Melt the chocolate and butter in a water bath, and then stir until smooth.
  2. Now mix flour, salt, baking powder and vanilla.
  3. Beat eggs and sugar into thick foam. At this time, gradually slowly add the flour mixture.
  4. Place 1/3 of the resulting dough into a separate container. Add puree, cinnamon, vegetable oil to it. Stir.
  5. Add the chocolate to the remaining dough and mix well again.
  6. More than half chocolate dough Place in the prepared pan and level the surface. Place the second dough on it as a top layer and smooth it out again.
  7. Cover the remaining chocolate dough with pumpkin dough in several places. Using a spatula or knife, try to make circles.
  8. Bake for 40 minutes. But make sure that your pumpkin dessert is not overbaked, otherwise the pie may turn out too dry.

Pumpkin biscotti

Biscotti is a popular dry cookie that was invented by the Italians. It stands out for its curved shape and length. The name translates as “twice baked.” This dessert can be stored for 3-4 months.

  • 2 eggs
  • 1.2 tbsp. pumpkin puree
  • 2.5 tbsp. flour
  • 3.4 tbsp. Sahara
  • 1 tsp baking powder
  • 1 tsp each cloves, ginger, ground cinnamon, nutmeg
  • some hazelnuts or chocolate drops
  1. Prepare the puree by baking the pulp in pieces in the oven and then pureeing the vegetable in a blender.
  2. Mix sugar, flour, salt, spices, baking powder in one bowl. In another container, beat the eggs with pumpkin puree.
  3. Now knead the dough by combining pumpkin and flour mixtures. You want it to stick slightly to your hands. For more better taste add to your pumpkin dessert chocolate drops and nuts.
  4. You need to lay out cookies from the dough that are shaped like a log. Place it on a baking sheet and bake for 25-30 minutes in a preheated oven. The dough should be firm in the center.
  5. After you remove the baking sheet from the oven, let the cookies sit for 5-7 minutes and cool. Then, using a sharp knife, cut the resulting log into slices of croutons. They need to be baked in the oven separately again - about 15 minutes. This is the essence of “double baking”.

Pumpkin jam

So fragrant, healthy and incredibly delicious jam the whole family will like it. This pumpkin dessert It has a very beautiful color and contains a lot of vitamins.

  • 1.2 kg pumpkin
  • 1 lemon

For the syrup:

  • 1 kg sugar
  • 1 tbsp. water
  1. Remove the skin from your pumpkin, cut it into pieces, and remove the fibers from the pulp. Then cut into small cubes.
  2. Also cut the lemon, first removing the seeds from it. Now pass through a meat grinder along with the zest.
  3. To prepare the syrup, dissolve sugar in water and boil. Pour this hot syrup over the pumpkin, then add lemon minced through a meat grinder.
  4. Bring the sweet mass to a boil and cook over low heat for another 1.5 hours. Don't forget to stir periodically.
  5. Close the finished jam nylon covers in jars.

Flavored pumpkin pie

  • 1 tsp soda
  1. Using a grater (but not the largest one), grate the pulp. Squeeze the juice from the puree. This is especially necessary when your pumpkin is very juicy.
  2. Grate the lemon zest on a fine grater and squeeze out the juice from the lemon itself.
