This cupcake, like a warm autumn greeting, will brighten up a chilly rainy morning and give you joy with a cup of hot coffee. Walnuts or any soft nuts, such as pecans or peanuts, are suitable for the cake. Homemade yolks give the dough a beautiful yellow color. But if the yolks are not so bright, then the dough can be tinted with turmeric, orange zest or saffron.

For the cake we need the following products: flour, eggs, sugar, butter, chocolate, ground and toasted nuts, baking powder, vanillin.

Oil room temperature grind with 100 grams of sugar until white and add the yolks.

Mix the resulting mass well until smooth and homogeneous.

Beat the whites with the remaining sugar until stiff foam. Add sugar only after the foam becomes noticeable and dense. Beat with sugar until it is completely dissolved. Ready whipped whites should not spill out when turning the dishes over.

Mix flour with baking powder and vanilla and add it to the butter-yolk mixture. You will get a thick mass.

Mix the whites into this mixture in parts. Mix gently, using folding movements, without rubbing, but lifting the dough from below.

Divide the dough into three equal parts.

Add ground and toasted nuts to one part.

Combine the second part of the dough with melted chocolate. I left the third part of the dough without additives. But if there is not enough color, you can tint it with the zest of one orange or saffron.

Grease a cake pan with butter and dust with flour. Lay out the yellow dough first. Distribute it over the entire bottom of the mold.

Then place the chocolate dough on top of the yellow dough.

And lastly, add the nut dough. Flatten and bake for about 35 minutes at medium temperature until dry. Adjust the baking time according to your oven.

Cool the finished cake in the pan.

Then carefully remove, turning it over onto a plate.

I decorated the cake along the ridges with melted chocolate. The cupcake is ready.

You can sprinkle it with powdered sugar and serve it with tea and coffee.

I haven’t written recipes on li.ru for a long time. But this doesn’t mean that I stopped cooking - I bake one pastry every week - it’s ironclad, sometimes I even get two.
And I photograph some of my baked goods, the cooking process, but I never get around to posting them.
But I see that you are interested in recipes and someone has even already tried to cook according to the recipes that I posted and are happy, and therefore I will continue to post recipes;)
Today on the menu is the Three Wishes cupcake. I found the recipe here: but as always the amount of sugar rules)

What do we need?

1) butter - 200 g
2) sugar - 100 g (in the original recipe 200 g,
3) eggs - 4 pcs
4) poppy seeds - 30 g in the recipe, I sprinkle it on the eye :) so that it looks beautiful in my opinion)
5) chocolate – 60-70 g (I use Babaevsky bitter chocolate. I leave one strip of chocolate somewhere, and use the rest for the cake)
6) baking powder - 1 tbsp. l. (or 1 tsp slaked soda) - I tried both - no difference)
8) flour - 300 g

How to cook will be under the cut.

1) Melt butter in microwave oven and let it cool for a while so that you can add it to the dough later.
2) Beat eggs with two types of sugar - regular and a little vanilla.

3) Add cooled melted butter to the beaten eggs.

I usually melt butter in a bowl like this. I remembered the photo when I put the butter in a bowl))) and so I just took a photo of the bowl)))

4) Add flour and baking powder in small portions (I use my mechanical sieve to make the dough more fluffier).

5) Knead the dough until thick sour cream. The dough is thick enough, but not so thick that you can handle it :) And I divide it into 2 parts - somewhere in the fractions of 1/3 and 2/3.

6) To the first part (small) I add chocolate, broken into medium pieces (I divide the square in half - if it’s smaller, the chocolate will taste worse. It tastes better) and pour it into the greased bowl of the multicooker.

I added a little more than half the chocolate, stirred it and I see that somehow there wasn’t enough chocolate...

I break it with a knife if the chocolate was in the refrigerator.

And I throw such pieces into the dough.

Then I put the dough in the multicooker bowl.

7) On top of the first part I pour about half of the remaining dough (i.e. 1/2 of 2/3), without adding anything to it.

I spread it carefully with a spoon so as not to mix it with the bottom part.

8) Next, I work with the remaining 1/3 of the dough: I add as much poppy seed there as I like) so that it looks beautiful) And carefully spread the dough with a spoon (so as not to mix with the lower layers) on top of the dough already laid out.

9) I start the multicooker at 1:05 as always) I have a standard baking mode - I cook almost all baked goods this way)

10) After the end of time, I get an awesome cupcake (it’s really a little dry, but very tasty!) “Three Wishes” - the first wish is with chocolate, the second is regular, the third is with poppy seeds :) And the fact that the chocolate was not so broken , after cooking you can feel it very much, because... he didn't have time to melt.

And don’t think that he is the one who is not prepared. It’s just that in a slow cooker, for some reason, the top often turns out strange. But inside it is completely baked!
So, I definitely took a picture in a section, but it looks like it’s not this cupcake, but the previous one... and therefore I can’t find it... but as soon as I find a photo, I’ll post it in a section;) or, when I make a new one, I’ll take a picture and post it again )
Moreover, my poppy seed is settling... Although it is not settled in the photo in the recipe. But I think this problem can be solved by adding more flour (as in the recipe), but I try to use less flour) and I like how it turns out.
It turns out very tasty! I’ve made it a couple of times already and want to make it again. Now I’m thinking about what I might try to cover the top with glaze or pour something on top to make it richer...

  • butter - 200 g
  • sugar - 200 g

  • flour - 300 g

Cupcake “Three Wishes” in a slow cooker:

Melt the butter in a water bath or in the microwave. Grind eggs with sugar. Add vanillin. Mix cooled melted butter with beaten eggs. Add flour and baking powder in small portions. Knead the dough and divide it into three equal parts.

Add chocolate to the first part of the dough; it is better to cut it into small cubes or break it into pieces, because when grated it turns out too fine, and when baking in a slow cooker, almost all of it will melt.

Pour the dough with chocolate into the greased multicooker bowl.

Leave the second part of the dough without filling or add a handful of chopped nuts. Place it on top of the chocolate dough.

Mix the third part with poppy seeds and carefully place it on top of the vanilla dough or on top of the dough with nuts.

Bake the “Three Wishes” cake in a slow cooker in the “baking” mode for 65 minutes. After the signal, remove the cake from the bowl using a steamer basket.

We present you the recipe delicious cupcake. It combines three flavors: chocolate, poppy seed and raisin.

The cupcake is very simple and delicious. Prepares quickly and without yeast.

For the cake you will need a 22*12 cm pan.

Ingredients

  • 1.5 cups wheat flour
  • 0.2 kilograms of butter
  • 160 grams of sugar
  • 4 chicken eggs
  • 2 teaspoons baking powder
  • 30 grams poppy seeds
  • 120 grams of raisins
  • 50 grams white chocolate
  • powdered sugar

Cooking process

Wash the raisins, put them in a bowl and pour boiling water over them. Leave it like this for a few minutes.

Place the butter into a mixing bowl. Add sugar there and beat everything until fluffy.

Then add the eggs and beat again until smooth.

Sift the flour into a bowl and add baking powder. Mix everything.

Add the flour to the butter mixture and beat everything well. The dough is ready, divide it into 3 parts.

Drain the water from the raisins and transfer them to a napkin.

When it dries slightly, transfer it to a bowl and add flour (1 tbsp), mix well.

Mix the prepared raisins with the first part of the dough.

Pour dry poppy seeds into the second part of the dough and mix thoroughly.

Chop the white chocolate with a knife and put it into the remaining dough, mix.

Take a baking dish and line it parchment paper and place the dough with raisins on the bottom.

We distribute it well. Place dough with chocolate on top, and then dough with poppy seeds.

Preheat the oven to 180 degrees and bake the cake for 40-50 minutes, until done.

Leave the finished cake to cool in the pan, then remove and transfer to a plate.

Sprinkle with powdered sugar and serve.

  • 180 g flour

You will need:

  • 150 g butter or margarine
  • 150 g sugar
  • 4 eggs
  • 100 g chocolate
  • 2 tsp. baking powder
  • 150-200 g flour
  • 200 g raspberries
  • 300 g curd cheese (Almette, Buko or Philadelphia)

Preparation:

  1. Cut the chocolate into cubes.
  2. Grind the butter with sugar until the mixture becomes white.
  3. Add eggs, mix.
  4. Add chocolate and stir again.

You will need:

  • 100 g flour
  • 20 g oat flour
  • 1 tsp. baking powder
  • 75 g sugar
  • 3 tbsp. l. vegetable oil
  • 3 tbsp. l. yogurt
  • 1 egg
  • 2 tbsp. l. frozen blueberries
  • zest of 1/2 lemon

Preparation:

  1. Mix flour oatmeal, sugar, baking powder, lemon zest.
  2. Mix in a separate container vegetable oil, yogurt, egg. Then combine the two resulting mixtures and mix well.
  3. Sprinkle blueberries with 1 tbsp. l. flour, mix and add to the dough.
  4. Place in molds and bake at 180ºC for 35 minutes.


Chocolate cupcakes with curd filling

You will need:

  • 270 g flour
  • 2 tbsp. l. cocoa powder
  • sugar (100 g for dough and 4 tbsp for filling)
  • 100 g melted butter
  • 100 g melted dark chocolate
  • 200 ml kefir
  • 3 eggs (2 eggs and 1 white for the dough and 1 yolk for the filling)
  • 1 tsp. baking powder
  • 1/2 tsp. soda
  • 250 g cottage cheese

Preparation:

  1. For the filling: mix cottage cheese, 4 tbsp. l. sugar and 1 yolk.
  2. For the dough: first mix kefir, 2 eggs, 1 egg white, melted dark chocolate, melted butter and 100 g of sugar. Separately mix flour, cocoa, baking powder and soda. Then combine all the ingredients and mix well.
  3. Place the dough in the muffin tins 2/3 of the way up and place the curd filling in the middle.
  4. Bake at 180ºC for 20 minutes.


Gingerbread cupcakes with pear

You will need:

  • 300 g pear
  • 350 g wheat flour
  • 150 g sugar
  • 250 g sour cream
  • 100 ml sunflower oil
  • 2 chicken eggs
  • 1 tbsp. l. honey
  • 2 tsp. baking powder
  • 1 tbsp. l. ground dried ginger
  • 1 tsp. cinnamon

Preparation:

  1. Mix flour, sugar, dried ginger in a bowl (you can take fresh, then you need to peel the ginger root and grate it on a fine grater), cinnamon, baking powder and a pinch of salt.
  2. In another container, mix sour cream, eggs, sunflower oil and honey.
  3. Mix all ingredients to form a thick dough.
  4. Wash the pears, peel them, remove the seed pods and chop finely. Then add them to the dough and mix so that the pear pieces are evenly distributed throughout the dough.
