The most common and accessible fruit at any time of the year is the tangerine! Sweet tangerines, rich in vitamin C, are both tasty and healthy. Therefore, we offer you a recipe for shortbread baskets filled with tangerine slices and tangerine jelly.
You can also take ready-made store-bought shortbread baskets, but much tastier and healthier (after all, store-bought baskets will inevitably contain preservatives and other not very healthy ingredients) will be shortbread baskets baked at home.
First prepare the shortbread dough. To do this, soften butter must be ground into crumbs with flour. First sift the flour, add baking powder and mix well. Add sugar and egg to the butter crumbs and knead the dough. Form the dough into a ball, wrap in cling film and refrigerate for 30 minutes.
After the dough has risen a little, divide it into small balls. Place each ball in a tart or muffin tin. If you have a special mold, then place the upper part inside the baskets, and if you use ordinary molds, then to prevent the dough from rising inside the baskets during baking, you need to put a “weight”. You can place pieces of foil or parchment paper, and pour beans on them. The dough can also be pricked a little inside the baskets with a fork. Bake the baskets for about 7 minutes at 200 degrees Celsius. Then remove the weight and bake for about 5 more minutes until the shortcrust pastry baskets are golden brown. After cooling, the shortbread baskets are ready to be filled with filling.
Divide 1-2 tangerines into slices according to the number of baskets and place a slice in each shortbread basket.
To prepare the jelly, squeeze the juice from the tangerines using a juicer (strain if necessary). Or peel the tangerines, remove the white fibers and puree the tangerines in a blender. The resulting mass must be filtered through a sieve to obtain tangerine juice.
Soak the gelatin in warm water, then heat on the stove (stirring) until the gelatin dissolves. Add sugar and dissolve it. Pour in tangerine juice and remove from heat. When the resulting solution has cooled to room temperature, pour it into the baskets. And put the baskets with jelly and fruit in the refrigerator. Once the jelly has set, the baskets are ready.
Remove the butter from the refrigerator to warm to room temperature. Sift the flour, mix with a pinch of salt. Using a knife, chop the butter into small pieces with the flour.
Add yolks, sour cream and sugar to a bowl of flour, knead the dough. The yolks and sour cream must be very cold, so they must be kept in the refrigerator.
Knead the dough quickly. Cover it with cling film and leave for 30 minutes. to the cold. This dough can be prepared in advance and can be stored in the refrigerator for up to 3 days.
Place the molds for the baskets in the refrigerator for 2–3 hours. After this, they do not need to be lubricated with oil. Preheat the oven to 200°C. Place a small piece of dough into each mold and spread it with your hands over the entire surface. The thickness of the dough should be 2–3 mm. Place in the oven for 10 minutes. Remove from the oven, cover with a towel and let cool.
Rinse the dried apricots, add cold water, bring to a boil and remove from heat. Using a blender, grind the dried apricots into a puree. Whip the cream into a thick foam. Combine the whipped cream with the dried apricot puree and quickly mix with light movements. Soak gelatin in 1 glass of cold water. When it swells, place it in a water bath, pour in Orange juice and, stirring constantly, bring to a boil, but do not boil.
Peeled fresh or canned fruits, such as kiwis and apricots, cut into thin petals. Wash the berries and dry with paper towels. Place 2-3 tbsp on the bottom of each basket. l. whipped cream and dried apricots. Place kiwi, apricots and berries on top. Using a brush, cover with a layer of jelly.
The quality of the protein cream is affected only by the freshness of the eggs. The whites of market eggs instantly turn into a thick cream, and store-bought packages can present a surprise: “aged” eggs never form a stable foam when whipped.
The margarine is taken out of the refrigerator in advance, then the soft block is cut into cubes.
Sprinkle margarine with sugar and run through the mixture with a fork. There is no need to dissolve the sugar, just mix the ingredients.
