Cottage cheese casserole with rice and raisins - step-by-step recipe

Since we will be making cottage cheese casserole with rice, the first thing we need to do is boil the rice. It is advisable to use round rice. Wash it in 2-3 waters. Pour into boiling, lightly salted water. Cook over low heat, uncovered, for 15 minutes. Next, remove the pan from the heat and let the rice sit for another 10 minutes. Drain it in a colander. Rinse under running water. Place the cooked rice on a plate.

Rub the cottage cheese through a sieve. Add it to the rice.

Add washed and dried raisins.

Stir the casserole mixture.

Add a packet of vanillin (or vanilla sugar) and mix again.

Beat the egg into a separate bowl. Add sugar to it.

Stir with a fork until smooth.

Pour the beaten egg into the rice and cottage cheese.

Mix the curd and rice mixture with a fork.

Preheat the oven to 190C. Cut a piece of butter and grease an ovenproof dish with it. Place the curd mixture into it. Flatten with a spatula.

For paste-like cottage cheese, you can add less sugar or add a little flour to thicken the curd mass. Grind everything thoroughly with a spoon.




Add cooked rice. If you are preparing rice specifically for casserole, mix it with curd mass while it's warm and gooey. If you add cold rice left over from a side dish, you will need to mix it with cottage cheese and grind it with a masher.





Beat the egg, the mash should be homogeneous, with a low foam cap.






Rinse the raisins in advance and pour boiling water for two to three minutes. Drain and rinse under clean water. Pour onto a towel and blot.




Add spices (at your discretion) and raisins to the cottage cheese and rice. Mix everything.
